JDH Fusion Box Cloud Kitchen Launched in Ahmedabad
JDH Hospitality Bets on Ahmedabad’s Expanding Home Dining Market with New Cloud Kitchen Venture
Ahmedabad’s food business continues to change as more families and working professionals turn to app-based ordering and home dining. Joining that shift is local catering company JDH Hospitality, which has opened a new cloud kitchen venture, JDH Fusion Box, at Shilaj on the city’s western edge.
The new facility was formally opened on Sunday, 28 June, at 108 Yards on SP Ring Road near Swagat Green Ville-2. The kitchen operates from a location chosen to serve residential neighbourhoods and commercial areas that have grown rapidly along Ahmedabad’s expanding western corridor.

JDH Hospitality, previously known mainly for catering services, has spent several decades serving weddings, corporate events, religious gatherings and large social functions across Ahmedabad and other parts of Gujarat. The business is led by entrepreneur and Rotarian Jainish Shah, who began his career as a chef in 1994 before opening his first restaurant in 2004 and later moving into large-scale catering operations.
The move into cloud kitchens reflects wider changes in the city’s food industry. During and after the Covid-19 pandemic, Ahmedabad witnessed a sharp rise in delivery-only kitchens and specialised food brands operating without traditional dining spaces. Industry observers have pointed to growing demand for regional cuisines, family meal packs and convenient catering options as more consumers choose delivery services for regular meals and celebrations at home.
JDH Fusion Box plans to serve several customer groups, including office workers, families, corporate clients and people organising small social gatherings. The company says the kitchen will focus on freshly prepared meals delivered from a central production unit rather than through restaurant dining rooms.
The idea behind the JDH Cloud Kitchen venture dates back more than a decade. According to Shah, the concept began around 2011 while he was operating a busy restaurant. He noticed that families ordering meals for gatherings often faced long waiting times, sometimes exceeding thirty minutes, while guests sat waiting for food to arrive.
That experience led to a simple question: could restaurant-style meals be delivered to homes exactly when families wanted them, without the stress of cooking or waiting?
The business also identified another issue familiar to many Indian households during festivals and family events. In many homes, much of the cooking responsibility still falls on women in the family, leaving them with little time to participate fully in celebrations or spend time with guests.
The Fusion Box service was designed as a response to that challenge. Instead of preparing food at home, customers can order ready-to-serve meals for groups of ten to twelve people or more. Deliveries currently cover Ahmedabad without additional distance charges.
The service offers a series of fixed meal combinations containing seven or eight dishes, alongside customised options for customers with specific preferences or dietary needs. Menus include Gujarati and Punjabi meals together with Italian and Mexican dishes, starters, sweets and desserts.
Jain food preparations form another important part of the business. Ahmedabad has one of India’s largest Jain communities, and vegetarian dining remains deeply rooted in the city’s food culture. Many national restaurant chains operating in the city have introduced separate vegetarian kitchens or menus to meet local demand.
The company has also included practical elements aimed at reducing work for hosts after an event finishes. Orders arrive with disposable serving items, cutlery and waste bags, while containers are designed for microwave heating.
At present, the operation serves lunch between noon and 3 pm and dinner from 7 pm until 10 pm. Customers can cancel orders up to thirty minutes before delivery. The business is also preparing a dedicated mobile application that will allow customers to place orders, track deliveries and browse menus digitally.
The family business now includes the involvement of Pankti Jainishkumar Shah, who is helping lead the expansion of The Fusion Box concept. Future plans include food options aimed at younger customers and possible expansion into cities outside Ahmedabad.
Ahmedabad, now among India’s largest urban centres and one of Gujarat’s strongest service economies, has become an increasingly attractive market for food entrepreneurs and technology-based delivery businesses. The city’s population growth, expansion of residential areas along the SP Ring Road corridor and rising digital adoption have encouraged many local businesses to experiment with online-first food models.
For JDH Hospitality, the launch marks another stage in a journey that began in professional kitchens more than thirty years ago and has gradually moved through restaurants, event catering and now app-supported food delivery. Whether cloud kitchens become the company’s biggest chapter remains to be seen, but the direction reflects how quickly Ahmedabad’s food habits continue to evolve.
